Wedding & Dinner Party Sample Menu

All Wild Seasoning events & party menus will be designed specifically for your event, with your budget in mind so please let us know of any ideas you may have, whether it be a themed event or a specific cuisine, Wild Seasoning will create a menu just for you.

Warm soft quail’s scotch egg, asparagus & fresh broad beans with a rich béarnaise sauce

Thai grilled guinea fowl, sweet chilli jam, green papaya salad & char-grilled baby bok choi

Cajun seared tuna loin, avocado cream, char-grilled corn & tomato salsa jelly

Smoked slow gin cured duck breast, celeriac & horseradish puree, pickled baby beets & toasted hazelnuts

Pan seared scallops, crispy pancetta, celeriac puree & pea vinaigrette

Hot kiln smoked Loch Fyne salmon, trio of beetroot, baby watercress with a fresh horseradish dressing

Main

Slow roasted fillet of Aberdeen Angus beef, shallot & tarragon puree, braised cheek & mushroom pie & a rich red wine jus

Lamb rack, pine nut & herb crumb, braised shallot, glazed carrots & a red wine, rosemary & port jus

Pan roasted rump of lamb, confit belly croquette, mint pea puree, potato dauphinoise with a rosemary & redcurrant jus

Slow roasted Hertfordshire pork belly, crackling, carrot & thyme puree, confit fennel & a local cider jus

Pan-seared Cornish hake with buttered spring vegetables & a caper, brown shrimp & butter sauce

Nepalese chilli pork cooked three ways

Goat’s cheese, broad bean & courgette cannelloni, dressed heritage tomatoes & red pepper chutney

potato & ricotta gnocchi, tarragon, broad bean & brown butter sauce with pickle asparagus & baby leaves
